DOVER - Walt Bansley, the owner of Snow Republic Brewery, says he meant to do a “soft opening,” a term used in the restaurant industry to indicate that the doors have opened with little fanfare or announcement. It’s a way for staff to stretch their collective legs without too much scrutiny.
“I wanted to work out the kinks,” he says. “There’s a lot I don’t know. I needed to figure out what I don’t know. But it has been like we’ve been open. There is no soft open. It’s been crazy in here. They’re showing up.”
